We did not set out to start a brand. We set out to find a snack we actually wanted to eat, and kept coming up empty. The protein bars were half sugar. The mass-market jerky was sweet, soft, and padded with additives you needed a chemistry degree to pronounce. The "spicy" snacks were spicy in name only, a dusting of chili powder over a sugar hit. Nothing on the shelf was both clean and seriously hot.
So we made it ourselves. The Hell Meat story is really the story of that gap, and of deciding to fill it with real Thai beef instead of a marketing slogan.
The name: why we call it "Devil's beef"
Hell Meat is a translation of เนื้อนรก, "meat of hell" or "Devil's beef." It is bold on purpose. Our Signature Heat line finishes lean biltong with Carolina Reaper, the world's hottest chili at over 1.5 million Scoville Heat Units, so the name is a promise as much as a joke: this is beef with genuine fire behind it.
But the name also has a second meaning. Making a snack this clean, in small batches, from one traceable herd, is the hard way to do it. It would be far easier to buy commodity beef, load it with sugar and preservatives, and sell it cheap. We chose the harder road, and the name is a nod to that too. A little hell in the kitchen so there is none in the ingredient list.
What "clean spicy protein" actually means
Plenty of snacks claim to be healthy. We prefer to be specific, because specific is checkable. Here is what every pack of Hell Meat commits to:
- No sugar. Most jerky leans on sugar for taste and shelf life. Ours gets its flavor from beef, vinegar, salt, spice, and chili, so it stays savory instead of sweet.
- No MSG. Real cured beef does not need a flavor enhancer to taste like something. The brine and the drying do that work.
- High protein. Air-drying removes water and concentrates the muscle, so biltong is roughly half its weight in protein, often around 25 to 30 grams per 50g serving depending on the cut.
- Single-source Thai-French Charolais beef. One lean, well-muscled breed, one supply chain, every batch traceable.
We want to be honest rather than make health claims. Biltong is a salted, cured product, so it does carry sodium. Enjoy it as the protein-dense snack it is, in sensible portions.
How we actually make it
The clean ingredient list is not an accident of marketing. It is a consequence of how we produce. Two decisions do most of the heavy lifting.
